So today is my older sons 25th birthday. Which I’m still having a hard time believing he is that old. Enjoy your children. Cherish every moment with them. Time flies and before you know it your children are adults. But to me; my sons will always be my little boys.
Okay… it’s a birthday, time to be happy and celebrate. But wait you say, how can you have a birthday without a birthday cake. Birthday cakes aren’t vegan. No cake! No candle!
Calm down, take a deep breath, think happy thoughts. All is not lost. There will be cake and there will be candles.
Head on over to my Pinterest, Allyouneediskale, and look on my dessert board; Dessert… YUM! and there you will find, in all its birthday glory, a cake, a birthday cake! Yes Virginia there is a vegan birthday cake. A vegan vanilla birthday cake to be exact.
So now you can have your cake and eat it too. Sorry, I couldn’t resist.
A great big Happy Birthday wish to all you April babies! Yes that includes you too Derick and Brendan, my two April babies.
Hope you enjoy the cake recipe.
If you try it, let me know what you think. What is your favorite way to celebrate your birthday?

Here we go…another review of Ben & Jerry’s Non-Dairy Frozen Desserts.
To be honest with you, I’m a little afraid to do this review?
Coffee Caramel Fudge. The name is great. Sounds like something I would definitely love.
Everyone else I know loves it, why should I be any different? Even my non-vegan boyfriend loves it!
It looks good with its mocha color, swirls of caramel, and bits of chocolate fudge. Everything you would hope for and more.
I took my first spoonful waiting for that magic coffee ice cream flavor. Hmmm, how do I say this, I was underwhelmed. Okay, there; I said it.
It’s a little hard to explain. When I took another spoonful I noticed that you don’t really taste the coffee flavor right away. It’s more like an after taste.
The flavor I tasted the most was the fudge, it seemed to over power the other flavors. There definitely could have been more caramel swirled through it. I didn’t really taste the caramel much.
Again, like I said with the review of Ben & Jerry’s Chunky Monkey, it’s still good non- dairy ice cream. It’s, in my option, one of the best non-dairy ice cream brands on the market.
So as of now my favorite Ben & Jerry’s non- Dairy Dessert is still P.B. & Cookie. My favorite…not a strong enough word, my could and would eat everyday of my life best ice cream ever!!!!!!!!! Yeah, it’s that good.
One more flavor left to try…Fudge Brownie. Will this be the flavor that outshines them all or will my heart forever belong to P. B. & Cookie?
We will see, we will see
Until then if you have any questions or comments about, well anything, please send them my way. Always happy to hear from you!
I thought I’d give another one of Ben & Jerry’s Non- Dairy Desserts a try. The store didn’t have the one I really wanted to try. But since I have this strange addiction to peanut butter…What!?…Doesn’t everyone? I thought this would be a good choice. I never had the dairy version of this flavor. I figured that would make for a more fair review since I don’t have anything to compare it to.
I couldn’t wait to get home and try it, I get soooo excited about non- dairy Ice cream. I hope it lives up to my expectations!
The minute I walked in the door I peeled the plastic off the top and opened the lid. “Hmmm, this looks promising”
I could actually see the peanut butter! Oh and the cookie. Although I could care less about the cookie once I saw that creamy peanut butter. Did I mention I like peanut butter?
The moment of truth, that first spoonful is the make or break one. Please, please, please let it be make!
Yes!!! It’s good…really good! You can taste the cookie and the glorious peanut butter in every bite. Ok so I took more then one bite. It tastes like regular ice cream. It’s smooth and creamy and tastes like its name P.B. & Cookie. This is definitely a keeper. Or I should say a rebuyer, this isn’t going to Be hanging around in my freezer for very long.
This would definitely get Two thumbs up. But I would’ve had to put down the container for that.
I hope my review helps make your non-dairy ice cream shopping a bit easier.
I will be reviewing all the other flavors of Ben & Jerry’s Non-Dairy Dessert over the next few weeks. I’m optimistic for more thumbs up?
Do you have a favorite Non-Dairy ice cream Brand or flavor?
As always your questions and comments are always welcomed
So…I read a while back that Ben & Jerry’s was coming out with non dairy versions of some of their ice cream flavors. Pre vegan days I loved their Chunky Monkey flavor.
Yesterday Frank and I were in Publix Super Market and I had a craving for ice cream (which I very rarely have). I went to the section where they keep( what little selection they have) the non dairy ice cream. Lo and behold sitting proudly on the top shelf were three different flavors of Ben & Jerry’s new line of non dairy frozen dessert. And there it was in all its chunky glory my favorite flavor in non dairy form. I snatched it off the shelf, did my little happy dance, which always makes Frank smile, and we were on our way. I could hardly wait to get home and try it.
For those who don’t know, Chunky Monkey is banana ice cream YUM with chunks of chocolate and walnuts mixed in. When I opened the lid it looked like my old favorite. Took that first spoonful, Frank staring at me with anticipation and…it wasn’t quite what I was hoping for. There wasn’t that creamy banana taste that I loved so much.
The chunks were there like I remembered but it just didn’t work without the banana taste. Don’t get me wrong, it was ok as far as non dairy ice cream goes. If you never tried the original dairy version you may enjoy this non dairy version more then I did. I was really hoping for that WOW feeling I got when I tried the original for the first time, but Alas it just wasn’t there. It’s a little pricey $5.49 for a pint and I can really do without all the extra additives and such that are in it. Not sure if I will give the other flavors a try.
It also dawned on me I can make my own version of this non dairy frozen dessert. It’s quick, easy, and only requires three ingredients…I’ll give you a hint… One of the ingredients is banana.
Check back soon for a list of the ingredients and step by step instructions on how to make it.
