Homemade Vegan Chunky Monkey “Ice Cream”

Sorry for the wait but here it is as promised; drum roll please…my homemade version of Chunky Monkey “Ice Cream”.

Looks yummy! And it’s oh so easy to make.

It takes just minutes to make and only 3 ingredients. You can easily adjust the amounts to fit your taste or double, triple, quadruple, well you get the idea…

So without further ado, here are the ingredients

  • 2 frozen bananas- it’s best to freeze them overnight or for at least 3 hours
  • 2 Tbsp vegan chocolate chips
  • 2 Tbsp walnut halves or pieces

I like to use Enjoy Life Mega Chunks for the chocolate chips

Again feel free to add more or less walnuts and or chocolate chips/chunks to suit your taste.

Gather up all your ingredients and  blender (I use a Ninja BL780), place the frozen bananas in the blender and start blending. It will take a few minutes for the bananas to become ” ice cream” consistency. You may need to stop your blender to scrape down the sides every so often. The bananas will crumble into bits first.

Just keep on blending and you will see the crumbles start to turn creamy and  look like ice cream.

When the bananas turn creamy turn off the blender. Now is the time to add the walnuts and chocolate chips or chunks. You can add as much or as little as you like.

Once you have added the nuts and chips, pulse your blender once or twice. You want to just incorporate the nuts and chips, not completely mix them in. Leave it chunkyimage

At this point you can either transfer your “ice cream” into one large bowl or two small bowls, top with additional walnuts and chocolate chips, optional, or put the “ice cream in the freezer to firm it up more. Either way is fine it’s just a personal preference.

Last, but definitely not least, comes the best part. Grab a spoon and dig into some creamy, chunky, banana goodness!
