So Delicious Dairy Free Walnut Almond Milk!

I found this the other day at Target. I love walnuts and almonds so I knew I had to give it a try!

I always check the ingredients and labels on products before I buy them. I know So Delicious is a good company, but I still check you don’t want to bring something home and realize it has some stuff in it you weren’t expecting.

My number one bit of advise…always check labels.

No fear I did the label checking for you on this one?

The first thing I look for when buying non dairy milk is if it has Carrageenan in it.

Ok here we go

  • 45 calories per 8 oz serving
  • 5 grams of sugar
  • soy free
  • dairy free
  • carrageenan free
  •  Non-GMO project verified
  • certified vegan

It has a similar taste to Almond Milk with a hint of Walnut.  Neither one of the flavors over powered the other.  It’s the same thickness as almond milk and has a tanishy ( is that a word) color.

img_1192I use it in my Vegan Tropical Strawberry Shakeology and it tastes really good!

So now am I not only getting all the health benefits of almonds I’m  getting the benefits of walnuts as well.

So Delicious  Dairy Free Walnut Almond Blend is a good addition to smoothie, oatmeal, cereal, baking, and anywhere you would use non-Dairy milk.

I know it’s my new favorite !❤️

Today Is The Last Day Of Summer. You Know What That Means…Pumpkin Spice Everything!


Ok, this pumpkin spiced flavored everything does get a little out of control. The other day I actually saw pumpkin spice scented Clorox Bleach?

Don’t get me wrong, I love pumpkin spice flavor but something’s should never be Pumpkin Spiced!

The problem is most of the packaged stuff out there isn’t made with real pumpkin flavor.  It’s loaded with stuff you really don’t want and shouldn’t eat. The majority of the productes out there aren’t vegan. Don’t let the healthy sounding titles on the boxes fool you.

Your best bet is to make your own pumpkin spice drinks, desserts, entrees, pancakes, whatever you like. There are so many great vegan recipes on Pinterest, Facebook, food blogs, or just google some?

Vegan Mini Dark Chocolate Almond Coconut Cups


These little cups may be small in size, but they’re big on yum!

Just the right bite sized treat!

They are super easy to make and you can customize them to fit your taste.

I chose to keep mine simply with just almonds and shredded coconut.

You can do the same or add raisins, leave out the coconut, whatever you want.

I also chose to make mine using mini baking cups. You can use large ones if you prefer.

It doesn’t require a lot of ingredients. I’ll  list the ones I used, but again feel free to add whatever you want to yours. You can also melt more chocolate chips to make a bigger batch. Have fun with them!!!



  • vegan dark chocolate chips. I really like the Brand Enjoy Life
  • unsweetened shredded coconut
  • Sliced almonds
  •  coconut oil

For the 6 mini cups I made I used about 1/2 c of chocolate chips, 1 tsp coconut oil, and enough almonds and coconut to layer the bottom of the chocolate.




  1. pour desired amount of chocolate chips into a bowl
  2. add 1 tsp,or more if making a bigger batch, of coconut oil to the chips
  3. place the bowl in the microwave, microwave until chips are melted
  4. take the bowl out of the microwave and stir the melted chips to a smooth consistency
  5. line up your baking cups on a plate.
  6. fill the bottom of the cup with a layer of melted chocolate. Don’t fill it too high you need to leave room for the almonds and coconut.
  7. place the plate in the freezer for a few minutes, just until the layer of chocolate has hardened
  8. once Chocolate has hardened remove from the freezer. Now the fun begins! Start layering the almonds and coconut on top of the chocolate. Remember you can use anything you like to fill your cups.  Just make sure you leave enough room for the top layer of chocolate.
  9. once you have you cup filled, spoon the the remaining melted chocolate over top of your cups. If you run out of chocolate to cover the tops you can always melt some more.
  10. place the plate of cups back into the freezer until the chocolate has hardened
  11. once hardened remove from the freezer and enjoy!

You can either store the cups in the refrigerator or the freezer. I usually keep mine in the freezer. They stay harder that way.

See…wasn’t that easy?

Have fun filling your cups with whatever you like. You could chop up some cherries to put in your cup, or strawberries, or both!

Beachbody Challenge! This Vegan Girl Is Taking Care of The Inside and Outside of Her Body


I know I haven’t been posting as much as usual. I’m sorry,  I feel like I’ve been neglecting you and my blog☹️

But I do have a really good reason why !

About 3 or 4 weeks ago I decided to get my body in shape. Yes I know I eat well. Good clean eating. I feel good. I’m not overweight.

But I just wasn’t happy with the shape I was in. My body had no tone or definition.

I just didn’t feel like I was in the best shape I could be.

I learned about Beachbody from two wonderful friends of mine…thanks Christine and Michael. It just seemed to make sense to me. I saw first hand the results they  got from the program. So I decided to give it a try. Now I’m proud to say I’m hooked. I like working out . I do it in the privacy of my home. Don’t need any crazy equipment. I actually look forward to working out everyday.

Michael is my Beachbody Coach and along with His wife Christine they keep me motivated.

We along with others in our group are into our second week of the Beachbody Challenge. We have an app we log our workouts in everyday. If we stick to our required workouts at the end of the challeng, October 4th, we are all eligible to win money!

I can feel the change in my body.  It feels good, more limber and strong at the same time. Ive been doing PiYo which is a combo of yoga and Pilates, think yoga and Pilates on steroids?

So wish us all luck!!!❤️
