Ben & Jerry’s Cocunut Seven Layer Bar Non- Dairy Frozen Dessert Review

Yay! Finally found this at my Local Publix.

Ok back to the  Coconut Seven Layer Bar.

I love coconut so I was hoping this would live up to my expectations.

I opened the lid, nothing special. I knew I would have to dig deeper. Tough job but somebody has to do it?

 Aaah! That’s what I was looking for ! Caramel, chocolate chunks, graham cracker, it was all there!

Now for the big moment…the first spoonful


Yes! I so wanted to love this, it didn’t disappoint

I could taste all of the flavors in one spoonful. The coconut taste was great t didn’t overwhelm the other flavors.  The chocolate chunks have a nice Fudge taste. All the flavors were good, nothing tasted fake or artificial. Even Frank, who isn’t a big coconut fan, really liked it! I had to take his spoon away so he would eat it all?

You may recall from my first reviews, that P.B.&  Cookies was my favorite flavor of Ben & Jerry’s Non-Dairy Frozen Dessert. Well I think I found me a new favorite!?

It gets two?? up from me!

???So Easy So Good Veggie Salad???

So easy, so good! Yes this Vegan Veggie Salad is both!

I wasn’t really sure what to title this post. Yes I will tell you how to make the veggie salad. I also wanted to share with you why.

I’ve  been vegan for over three years now. I love being vegan and can’t imagine not being vegan. I eat only vegan food. The majority of the time I make all my meals from scratch. On some occasions I do eat packaged vegan foods. That my friends is what I mainly want to talk about. I promise I’ll keep it short ?

I’ve  noticed that my body isn’t very happy  with me when I eat processed or package food even though it’s vegan.  To be truthful, my body feels like crap when I eat packed foods.

Listen to your body!

There are so many packaged vegan foods popping up in stores nowadays.

just because they’re vegan doesn’t mean they’re good for you. Some contain a lot of  sugar, sodium, oils, and some strange stuff I can’t pronounce?

If you want to make sure the food you are eating is really good for you it’s best to make it yourself. I love knowing what is going into my body. When I make my meals from scratch I know exactly what I’m eating.

cooking from scratch isn’t hard or time consuming. You don’t need recipes or strange ingredients.

This is the part where the veggie salad comes in?

It really is so easy to make!

I’ll tell you how I made mine, but you can make yours however you like?

I used One 15oz can of organic no sodium black beans, one 15oz can of organic chickpeas. Drained and rinsed them. Pour into a large bowl. Add a 15 oz can of organic diced tomatoes with their juice. That’s the base of the salad. From this point on you can add any veggies and seasonings you like.

I added about a cup of corn, one chopped red bell pepper, a half red onion chopped, less then 1/4 cup of Oliver oil, a little sea salt and fresh ground pepper, a few dashes of chili powder, and some dried cilantro. Mix it all up in the bowl.

I like to put fresh basil on the top when serving.

You can serve it as is in a bowl, put it on top of spinach or rice, or even wrap it up in a tortilla and toast it ( I did the wrap yesterday for lunch, so good !)

So there you have it!

?Easy Four Ingredients Vegan Chili?

Hey everyone! I know it’s been awhile since my last post. Time has a way of flying by. But I’m back and I have a really simply, quick, yummy recipe to share with you. I kind of came up with this out of necessity. It was one of those running all day kind of days. Got home around dinner time, was starving and needed something I could throw together fast. So I checked my fridge, cabinets, and my veggie stash.

And that’s how this recipe was created?

Ok, here we go!


  • One 15oz can of black beans,  ( reserve some of the liquid from the beans)drained and rinsed
  • One 15oz can of Fire roasted tomatoes with their liquid
  • one small sweet potato
  • one package of Chili seasoning mix


  1. Cook the sweet potato. I just put mine in the microwave for a few minutes. Once done leave to cool a bit.
  2. In a pot on medium heat put the black beans, Fire roasted tomatoes, and as much of the Chili seasoning you like. I start with just a little seasoning and add more as I cook the chili.
  3. Chop the cooked sweet potato into cubes, as big or small as you like
  4. Add chopped sweet potatoes to the pot.
  5. Cook the chili on medium heat until it starts to boil then turn heat down to simmer so the seasonings have time to really release their flavor. If the Chili is too thick you can add some of the liquid you reserved from the beans. At this point taste your Chili. Adjust the seasoning to your taste. Add salt and pepper if you like.

Serve in two bowls.  You can add tortilla chips on the side or broken up in your Chili. I also like to add some Tahini on top of mine, so good!

Well that’s it! Easy right?

I hope you give this recipe a try. Feel free to experiment with it. Maybe add some different seasoning or add some vegan soy Chorizo to it.  (Trader Joe’s makes a fealty good vegan Chorizo). Either way you choose I hope you like it?
